The Herdade da Maia, that is part of the RTM Group, produces the famous Nisa Cheese. Made with sheep milk, known for being cured and artisan, slightly buttery and slightly acidic and naturally for being very tasty.
This kind of cheese is very typical in the Alto Alentejo region and has a Protected Designation of Origin, according to the European Union regulations.
Made with sheep milk, it is a semi-cured hard cheese, and its color varies between white and yellow. Its production involves the raw milk coagulation, then you deplete the curd, slowly, using a thistle infusion. In small size it presents a weight between 200 and 400 g. In normal size, presents between 800 and 1300 g.
Its shell is malleable after the fabrication, hardening with time. It radiates a pronounced aroma, presenting a slightly acidic taste.
